I love savoring one for breakfast with a cup of coffee or tea and grabbing another in the afternoon for a sweet, yet still wholesome, snack. And refreshing because they’re packed to the brim with fresh fruit. Cozy because they’re moist, fluffy, and warmly spiced with cinnamon. Especially because it’s no secret that when it comes to breakfast recipes, more times than not, I’m going to share something on the sweeter side. Or maybe it’s just because the world simply needs more cookies this year. Or maybe it’s because cookies bring back the best memories for me. Maybe it’s because most are easy to make. I’m not sure why, but I’ve really been on a HUGE cookie kick this year. I know you know what I’m talking about, cookies are just GOOD. ![]() The classic chocolate chip cookie can do no wrong and only makes life better, happier…and much more satisfying. And, these boats couldn’t be easier to make or more delicious. But I ended up loving the recipe! Sometimes I go into a recipe being very unsure about it. How cute are these egg boats? When I set out to make these, I really wasn’t sure how they would turn out. And when you toss it all together with the crispy chicken? The tahini makes it extra creamy and the pesto adds that herby, garlicky flavor. I also added a splash of red wine vinegar. It’s a simple mix of basil pesto, tahini, and lemon. Then we are layering the puff pastry with a quick schmear of creamy Swiss-ified cheese sauce, an egg, and some diced ham.
